Yummy BBQ Tofu

Before I start let me tell you guys: I am not the best candidate for cooking. I do not have patience. I get easily distracted when things are on the stove. I also always have to look up what a quart is and how many cups are in it. 

That being said, the vegan cookbook I got a few weeks ago has served a great purpose. It provides me with new ideas and ways to eat healthy and deliciously. 

The first recipe I tried was the BBQ tofu, and it was amazing. I made my own tweaks, such as not making homemade BBQ sauce, not using basalmic vinegar (not a fan of it), and not measuring the same amount. 

What I used: 

  • 3/4 cup barbecue sauce
  • 2 tbsp soy sauce
  • 1 block of firm tofu
  • olive oil spray

What I did: 

  • "Pressed" the tofu for the 30 minutes with the heaviest book I could find (aka my old fashion book below)
  • Mixed the barbecue sauce and 2 tbsp of soy sauce into an olive oil sprayed 13" by 9" baking dish
  • Cut the tofu into a half, then another half, then cut into triangular shapes (pictured below)
  • Preheated the oven at 375 degrees Fahrenheit
  • Put the tofu in the baking dish and turned many times to slather in bbq sauce (pictured below)
  • Once oven was preheated, cooked tofu for 15 minutes; flipped to other side to cook for another 15 minutes
  • All done! Took out the tofu and heated up some leftover brown rice with asparagus and mushroom sauté

This was the best tofu dish I've made, yet! And it was not too filling. I don't think I am ready to try being vegan again, but this dish was a good start! 

 

Maybe next week, I will try a breakfast dish. Breakfast is my favorite meal of the day, so why not :)
